The first edition in French of this milestone in the study of the digestive processes of man and animals, originally published in Germany as Die Verdauug nach Versuchen (1826). The authors, Friedrich Tiedeman (1781-1861) and Leopold Gmelin (1748-1804), expand their earlier work on the subject into a comprehensive and highly influential study, employing chemical operations and microscopic experimentation to determine the significance of organs and bodily fluids in the digestive process. Their achievements included determining the importance of stomach acids and the discovery of glucose.
